Chinese eggplants 

ABOUT:

Chinese Eggplant is set apart by its long, thin shape, and unique purple color. Additionally, its flesh is typically white, meaty, and nearly seedless. It has the sweetest flavor of all eggplant varieties; low in calories and a good source of fiber.

HANDLING: 

Eggplants are sensitive to both heat and cold and should ideally be stored at around 45-50°F
